  • 1 (32-oz.) pkg. ORE-IDA® Tater Tots®, or 8 cups
  • 3/4 cup Classico® Basil Pesto Sauce and Spread, divided
  • 1/4 cup fresh chopped basil
  • 2 cups Clover Valley® Fancy Shredded Mozzarella Cheese
  • 2 cups sliced onion
  • 1/2 cup roasted red peppers, cut into strips
  • 1/4 cup sliced kalamata olives
  • 1/4 cup shredded fontinella cheese
Preheat oven to 425°F. Bake potatoes according to package instructions.
In a medium bowl, mix together 1/2 cup of pesto sauce and mozzarella cheese.
Meanwhile, in a large skillet coated with nonstick cooking spray over medium-high heat, cook onions for about 6 to 7 minutes, or until softened. Remove from heat, and stir in red peppers and remaining 1/4 cup of pesto sauce.
Arrange Tater Tots® on oven-safe serving platter. Top with mozzarella mixture and bake for about 3 minutes, or until cheese is melted. Spoon onion mixture on and top with olives, fontinella cheese and basil.
