Pecan Toffee Shortbread

Ingredients
  • 2 C. Clover Valley® Pecan Chips
  • 1 C. Clover Valley® Butter, softened
  • 2/3 C. Clover Valley® Brown Sugar
  • 2 tsp. Clover Valley® Vanilla
  • 2 C. Clover Valley® All-Purpose Flour
  • 1/3 C. Clover Valley® Corn Starch
  • 1/4 tsp. Clover Valley® Salt
  • 12 oz. Clover Valley® Semisweet Chocolate Morsels
Directions
Spread 2 C. pecan chips on a cookie sheet
Bake at 350° for 8-10 minutes
In a mixing bowl, use a hand mixer to beat 1 C. softened butter until smooth
Add 2/3 C. brown sugar and 2 tsp. vanilla to the butter
In a separate mixing bowl, whisk together 2 C. flour, 1/3 C. corn starch, & 1/4 tsp. salt
Combine wet & dry ingredients
Add 1 C. toasted pecan chips and mix well
Press dough into baking sheet, leaving a 1” border around dough
Bake at 350° for 20 minutes
Sprinkle 12 oz. semisweet chocolate morsels onto warm shortbread
Spread chocolate once melted
Top with 1 C. toasted pecan chips
